A classic Chinese homestyle dish, 青椒肉絲 features tender strips of pork stir-fried with crisp green capsicum in a savoury sauce. The dish is simple yet packed with umami and freshness, making it a perfect companion to steamed rice.
Ingredients:
- 
For the pork:
- 200g pork loin, cut into thin strips
 - 1 teaspoon light soy sauce
 - 1 teaspoon Shaoxing wine
 - 1/2 teaspoon cornstarch
 - 1/4 teaspoon white pepper
 - 1 teaspoon vegetable oil
 
For the stir-fry:
- 2 green capsicums, julienned
 - 2 cloves garlic, minced
 - 1 teaspoon ginger, julienned
 - 2 tablespoons vegetable oil
 
For the sauce:
- 1 tablespoon light soy sauce
 - 1 tablespoon oyster sauce
 - 1/2 teaspoon dark soy sauce (for colour)
 - 1/4 teaspoon sugar
 - 1/4 teaspoon salt (adjust to taste)
 - 1/4 teaspoon white pepper
 - 1 tablespoon water
 
 
Instructions
- 
Marinate the pork:
- In a bowl, mix the pork strips with light soy sauce, Shaoxing wine, cornstarch, white pepper, and oil.
 - Let it marinate for 15 minutes to enhance tenderness.
 
2️⃣ Prepare the vegetables:
- Slice the green capsicum into thin strips.
 - Mince the garlic and julienne the ginger.
 
3️⃣ Stir-fry the pork:
- Heat 1 tablespoon of oil in a wok over high heat.
 - Add the marinated pork and stir-fry for 2–3 minutes until just cooked through.
 - Remove and set aside.
 
4️⃣ Stir-fry the aromatics & vegetables:
- Add another 1 tablespoon of oil to the wok.
 - Stir-fry the garlic and ginger until fragrant (about 30 seconds).
 - Add the green capsicum and stir-fry for 1–2 minutes until slightly softened but still crisp.
 
5️⃣ Combine & season:
- Return the pork to the wok.
 - Pour in the sauce and stir-fry for another minute, making sure everything is evenly coated.
 
6️⃣ Serve:
- Transfer to a plate and enjoy hot with steamed rice!
