Ingredients:

  • For the stir-fry:

    • 300g fresh Hokkien noodles
    • 200g beef sirloin, thinly sliced
    • 1 large onion, sliced
    • 2 shallots, thinly sliced
    • 3 cloves garlic, minced
    • 2 tablespoons vegetable oil
    • 1 tablespoon dark soy sauce (for colour)
    • 1 teaspoon white pepper

    For the special sauce:

    • 2 tablespoons oyster sauce
    • 1 tablespoon light soy sauce
    • 1 tablespoon dark soy sauce
    • 1 teaspoon hoisin sauce
    • 1 teaspoon Shaoxing wine
    • 1 teaspoon sugar
    • 1/4 cup beef broth or water
    • 1/2 teaspoon sesame oil
    • 1 teaspoon cornstarch (mixed with 1 tablespoon water)

      Instructions

      1. Prepare the beef:

        • In a bowl, mix the sliced beef with 1 teaspoon soy sauce, 1/2 teaspoon sugar, and a pinch of white pepper. Let it marinate for 10 minutes.

        • Pour hot water over the Hokkien noodles to loosen them. Drain well and set aside.

        3️⃣ Make the sauce:

        • In a small bowl, whisk together all special sauce ingredients, including the cornstarch slurry.

        4️⃣ Stir-fry aromatics:

        • Heat 1 tablespoon of oil in a wok over high heat.
        • Add the sliced onions and shallots, stir-frying until soft and slightly caramelised.
        • Add the minced garlic and stir-fry for 30 seconds until fragrant.

        5️⃣ Cook the beef:

        • Push the aromatics to the side of the wok and add the remaining oil.
        • Stir-fry the marinated beef until just cooked (about 1–2 minutes). Remove and set aside.

        6️⃣ Toss the noodles:

        • Add the blanched Hokkien noodles to the wok.
        • Pour in the special sauce and toss well to coat evenly.
        • Add the dark soy sauce for extra colour.

        7️⃣ Finish & serve:

        • Return the cooked beef to the wok and toss everything together.
        • Stir-fry for another minute until the sauce thickens and coats the noodles.
        • Serve hot, garnished with extra sliced shallots or spring onions for freshness.
