A classic Cantonese dish, Soy Sauce Chicken features tender chicken infused with a rich, savoury soy sauce flavour. It’s easy to prepare and perfect for a comforting meal, either on its own or served with steamed rice.
Ingredients:
- 1 whole chicken (approximately 1.5–2 kg)
- 10 slices of ginger
- 4 cloves garlic, smashed
- 2 star anise
- 1 tablespoon sugar
- 4 tablespoons soy sauce
- 2 tablespoons Chinese cooking wine
- 2 liters water
-
1/4 teaspoon white pepper
Instructions
- Prepare the chicken: Rinse the whole chicken under cold water and remove any excess fat. Pat dry with paper towels.
- Prepare the braising liquid:
- Bring to a boil: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 5 minutes.
- Add the chicken: Submerge the chicken into the simmering liquid, breast-side down. Cover with a lid and let it cook gently for 30–40 minutes, turning the chicken halfway through to ensure even cooking.
- Cooling and serving:
- Serve: Serve the Soy Sauce Chicken with steamed rice, allowing the kids to mix their rice with the rich and flavorful sauce—always fighting for the last bit!
Tips:
- Adjust the cooking time depending on the size of the chicken; a smaller bird will require less cooking time.
- The longer the chicken sits in the braising liquid after cooking, the more flavorful it will be.
- For a deeper color, you can brush the chicken with a light coating of sesame oil before serving.
