Stir-Fried Shrimp with Green Peas (青豆蝦仁) is a classic Cantonese dish that combines sweet, tender shrimp with crisp, vibrant green peas, creating a light and refreshing stir-fry. Ingredients:
- 300g shrimp, peeled and deveined
- 150g fresh or frozen green peas
- 2 cloves garlic, minced
- 1 small carrot, sliced (optional for colour)
- 2 tablespoons vegetable oil
- 1 tablespoon Shaoxing wine
- 1 teaspoon light soy sauce
- 1 teaspoon oyster sauce
- 1/4 teaspoon white pepper
- 1/2 teaspoon sugar
- 2 tablespoons water

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
Instructions

Prepare the shrimp:
- Wash and pat the shrimp dry with paper towels.
- In a small bowl, mix the shrimp with Shaoxing wine, light soy sauce, and a pinch of white pepper. Let it marinate for 10 minutes.

Blanch the peas (if fresh):
- Bring a small pot of water to a boil.
- Add the green peas and blanch for 1–2 minutes until tender and bright green.
- Drain and set aside. If using frozen peas, simply thaw them.

Stir-fry the shrimp:
- Heat 1 tablespoon of oil in a wok over high heat.
- Add the marinated shrimp and stir-fry for 2–3 minutes until they turn pink and opaque. Remove from the wok and set aside.

Stir-fry the vegetables:
- In the same wok, add another 1 tablespoon of oil.
- Stir-fry the garlic until fragrant (about 30 seconds).
- Add the carrot slices (if using) and stir-fry for 1–2 minutes until slightly softened.

Combine & season:
- Return the shrimp and peas to the wok.
- Add the oyster sauce, sugar, white pepper, and water, stirring well to combine.
- Pour in the cornstarch slurry and stir-fry until the sauce thickens and coats the shrimp and peas.

- Serve the Stir-Fried Shrimp with Green Peas immediately with steamed rice.

- Don’t overcook the shrimp—they cook very quickly and will become rubbery if left too long in the pan.
