This version of Spicy Chilli Prawns in Sweet and Spicy Sauce offers a wonderful blend of sweet, spicy, and savoury flavours that will surely appeal to a variety of tastes!
Ingredients:
- 300g prawns, peeled and deveined
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 4-5 fresh red chillies, chopped (adjust to your preferred spice level)
- 1 tablespoon ginger, minced
- 1 tablespoon soy sauce
- 1 tablespoon sweet chili sauce
- 1 tablespoon tomato paste
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 cup chicken broth (or water)
- 2 teaspoons cornstarch (mixed with 2 tablespoons water to make a slurry)

Prepare the prawns:
- Rinse the prawns under cold water and pat dry with paper towels. If they’re large, you can slice them in half lengthwise to make them cook faster and absorb more flavour.

Cook the prawns:
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the prawns and stir-fry for 2-3 minutes until they turn pink and opaque. Remove them from the wok and set aside.

Stir-fry the aromatics:
- In the same wok, add the remaining 1 tablespoon of oil. Add the minced garlic, ginger, and chopped chillies, and stir-fry for about 1 minute until fragrant.

Prepare the sauce:
- Add soy sauce, sweet chili sauce, tomato paste, rice vinegar, and sugar into the wok, stirring to combine. Then pour in the chicken broth (or water), bringing it to a simmer. Allow the sauce to reduce slightly, about 2-3 minutes.

Thicken the sauce:
- Add the cornstarch slurry to the wok, stirring constantly until the sauce thickens to a rich consistency.

Add the prawns back in:
- Return the cooked prawns to the wok and stir them well to coat them in the sweet and spicy sauce. Allow them to heat through for 1-2 minutes, letting the prawns absorb the sauce's flavours.

Finish the dish:
- Drizzle with sesame oil for added aroma and flavour. Stir everything to combine.
