Ingredients:

  • 300g beef (sirloin or flank steak), thinly sliced against the grain
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 3-4 fresh red chillies, thinly sliced (adjust to your preferred spice level)
  • 1 cup celery, cut into thin diagonal slices (try to use tender stalks)
  • 1/2 red bell pepper, sliced (optional, if you like extra crunch)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 1 tablespoon cornstarch (for thickening)
  • 1/4 cup water (or beef broth for extra flavour)

Instructions

  • Marinate the beef:
    • In a small bowl, mix the beef slices with 1 tablespoon of soy sauce, 1/2 teaspoon sesame oil, 1/4 teaspoon white pepper, and 1 tablespoon of cornstarch. Toss well to coat the beef and let it marinate for 15-20 minutes.
  • Prepare the sauce:
    • In a separate small bowl, combine 1 tablespoon of oyster sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sugar, and 1/4 cup of water (or beef broth). Stir until the sugar dissolves and set aside.
  • Stir-fry the beef:
    • Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned and nearly cooked through. Remove the beef from the wok and set aside.
  • Stir-fry the aromatics and vegetables:
    • In the same wok, add another 1 tablespoon of oil. Toss in the fresh chilli slices and stir-fry for about 30 seconds until fragrant (be careful not to burn them).
    • Add the garlic and onion, stir-fry for another 1 minute until softened and aromatic.
  • Cook the celery:
    • Add the celery to the wok and stir-fry on high heat for 2-3 minutes until the celery is tender yet still crunchy. The key is not to overcook it—keeping the celery crisp will balance the textures.
  • Combine everything and simmer:
    • Return the cooked beef to the wok with the vegetables. Pour the sauce over the mixture and stir well to coat. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and everything to come together.
  • Serve:
