Ingredients:

    • 200g pork loin, cut into thin strips
    • 150g garlic chive flower (韭菜花), cut into 5cm lengths
    • 2 cloves garlic, minced
    • 1 red chilli, sliced (optional)
    • 2 tablespoons vegetable oil

    Marinade:

    • 1 teaspoon light soy sauce
    • 1 teaspoon oyster sauce
    • 1/2 teaspoon Shaoxing wine
    • 1/4 teaspoon white pepper
    • 1 teaspoon cornstarch

    Sauce:

    • 1 tablespoon light soy sauce
    • 1 teaspoon dark soy sauce
    • 1/2 teaspoon sugar
    • 1 tablespoon water

      Instructions

      • Marinate the pork:
        • In a bowl, mix the pork strips with light soy sauce, oyster sauce, Shaoxing wine, white pepper, and cornstarch.
        • Let it sit for 10 minutes to absorb the flavours.
      • Prepare the wok:
        • Heat 1 tablespoon of oil in a wok over high heat.
        • Stir-fry the pork until lightly browned and just cooked through. Remove and set aside.
      • Stir-fry aromatics & chive flower:
        • Add another tablespoon of oil to the wok.
        • Stir-fry the garlic and red chilli for a few seconds until fragrant.
        • Add the garlic chive flower and stir-fry for 30 seconds.
      • Combine & season:
        • Return the pork to the wok and pour in the sauce mixture.
        • Stir-fry everything together for another minute until well combined and evenly coated.
      • Serve immediately:
        • Transfer to a plate and enjoy with steamed rice!
