I made this stir-fry on a whim one night when I was craving something fresh but had zero energy for complicated cooking. A handful of snow peas, some pork slices, a bit of chilli, and green onions—tossed in the wok—and suddenly I had this vibrant, flavour-packed dish. It’s now my little trick for those nights when I want a homemade meal that’s quick, simple, and still feels special.
Ingredients:
- 200g pork loin or pork belly, thinly sliced
- 1 cup snow peas, trimmed
- 2-3 red chillies, sliced (adjust for spice preference)
- 3 green onions, chopped into 2-inch lengths
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon sugar
- 1 tablespoon oil (for stir-frying)
- A pinch of white pepper
- 1 teaspoon cornstarch, mixed with 1 tablespoon water
Instructions

Heat your wok over high heat until smoking, then add the oil. Swirl to coat.

Add the pork slices and stir-fry for 2-3 minutes until lightly browned and cooked through. Remove and set aside.

In the same wok, add garlic and chillies, stir-frying for 30 seconds until fragrant.

Toss in the snow peas and stir-fry for another minute until just tender but still crisp.

Return the pork to the wok, add soy sauce, oyster sauce, sugar, and a pinch of white pepper. Stir well to combine.

Pour in the cornstarch slurry and toss everything until the sauce thickens and glazes the pork and veggies.

Add the green onions, give it a final toss, and serve hot with steamed rice.
