When I was small, I always looked forward to these crispy treats. The nutty aroma of sesame seeds and the satisfying crunch in every bite—this was a favourite of mine growing up. Today, I’m sharing another recipe in a series of home recipes, starting with these sweet and satisfying 油角 (Fried Sesame Dumplings). The wok is such a perfect tool for deep frying because it ensures even heat distribution, giving the dough a golden, crispy texture without burning.
Ingredients:
- For the dough:
- 250g plain flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1 large egg
- 70ml room temperature water
- 60g vegetable oil (preferably sunflower oil)
- For the filling:
- 50g roasted peanuts (skin removed, crushed)
- 50g white sesame seeds (toasted)
- 50g shredded coconut
- 100g sugar Oil for deep frying (enough to cover the Fried Sesame Dumplings)
Instructions
- Prepare the filling: In a bowl, mix together the roasted peanuts, white sesame seeds, shredded coconut, and sugar until well combined. Set aside.
- Make the dough: In a large bowl, combine the plain flour, salt, and sugar. Add the egg, vegetable oil, and water, and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- Shape the Yau Gok: Divide the dough into small portions. Roll each portion into a thin circle. Place a spoonful of the filling in the centre of each circle, then fold the dough over to create a half-moon shape. Pinch the edges tightly to seal.
- Fry in the wok: Heat the oil in a wok over medium heat to 170°C (340°F). Carefully place the Yau Gok into the hot oil, a few at a time, and fry until golden brown, about 3–4 minutes. Turn occasionally to ensure even cooking.
-
Drain and serve: Remove from the oil and drain on paper towels. Let them cool slightly before serving.
Tips:
- The wok is the perfect tool for deep frying because it distributes heat evenly, giving the dough a golden, crispy texture without burning. This ensures that every Fried Sesame Dumplings has a delicious, nutty flavour of sesame seeds coating each bite.
- Be careful when frying, as oil can splatter. Fry in small batches to avoid overcrowding the wok.
