Hong Kong-style Curry Beef Brisket is a cherished dish that evokes memories of family gatherings and comforting meals. The tender beef brisket, simmered in a rich, aromatic curry sauce, offers a delightful balance of flavours that warm the heart. This dish is a staple in many households, often served over steamed rice, making it a beloved comfort food.

Ingredients:

  • 500g beef brisket, cut into 2-inch cubes
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1-inch piece of ginger, sliced
  • 3 medium potatoes, peeled and cut into large chunks
  • 2 carrots, peeled and cut into large chunks
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups beef broth
  • 400ml coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 green chilli, sliced (optional)

      Instructions

      1. Prepare the beef: Heat a wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the beef cubes and sear them until browned on all sides. Remove from the wok and set aside.
      2. Stir-fry aromatics: 
      3. Add the remaining tablespoon of oil to the wok and sauté the garlic, onion, and ginger until fragrant, about 2 minutes.
      4. Stir in the curry powder, turmeric, cumin, and paprika. Cook for another 1–2 minutes, allowing the spices to bloom and become fragrant.
      5. Add the beef and liquids:
      6. Return the seared beef to the wok. Add the beef broth and coconut milk, stirring well to combine.
      7. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5–2 hours, or until the beef is tender and the sauce has thickened. 4. Add vegetables:
      8. After 1 hour of simmering, add the potatoes and carrots to the wok. Continue to cook for another 30 minutes, or until the vegetables are tender.
      9. Finish and serve: 
      10. Season with soy sauce, sugar, and salt to taste. Adjust the seasoning as needed.
      11. Serve the Cantonese Style Curry Beef Brisket over steamed rice, garnished with sliced green chilli if desired.
      12. Serve in a clay pot:
      13. After cooking in the wok, transfer the curry beef brisket to a clay pot for serving. This will help retain heat and enhance the flavours as you enjoy the dish.

        Tips:

        • For the best results, use a heavy-bottomed wok that can maintain heat well, allowing for slow simmering and even cooking.
        • Adjust the curry powder and seasoning according to your taste. If you prefer a spicier dish, add more green chilli or a pinch of cayenne pepper.
