This dish combines the bitterness of bitter melon with the pungency of fermented black beans and the rich flavour of saury fish. It’s a bold and aromatic stir-fry that’s perfect for a quick and nutritious meal.

Ingredients:

  • 1 medium bitter melon, sliced and seeded
  • 200g canned saury fish, drained and broken into chunks
  • 2 tablespoons fermented black beans, rinsed and mashed
  • 2 cloves garlic, minced
  • 1 tablespoon cooking oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

      Instructions

      1. Prepare the bitter melon: Slice the bitter melon in half, remove the seeds, and cut into thin half-moons. Sprinkle the slices with a pinch of salt and let them sit for about 10 minutes to help reduce the bitterness. Rinse thoroughly under cold water and drain.
      2. Stir-fry the garlic: Heat a wok over medium heat and add 1 tablespoon of cooking oil. Once hot, add the minced garlic and stir-fry until fragrant, about 30 seconds.
      3. Add the bitter melon: Add the prepared bitter melon slices to the wok and stir-fry for 2–3 minutes, until they begin to soften.
      4. Combine with saury and fermented black beans: Push the bitter melon to one side of the wok and add the canned saury fish chunks along with the mashed fermented black beans. Stir-fry for another 2–3 minutes, mixing the ingredients well, until the fish is heated through and coated with the black bean mixture.
      5. Season: Add salt and white pepper to taste, stir well to combine, and cook for another 1–2 minutes to let the flavours meld together.
      6. Serve: Serve hot as a main dish with steamed rice.
