苦瓜炒蛋  (Stir-Fried Bitter Melon with Eggs) is a popular Chinese dish known for its distinctive flavour profile, combining the slight bitterness of bitter melon with the delicate texture of scrambled eggs. This dish is simple yet nutritious and perfect for a quick meal.

Ingredients:

  • 2 medium bitter melons, sliced and seeded
  • 2 eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon cooking oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

      Instructions

      1. Prepare the bitter melon: Slice the bitter melons in half, remove the seeds, and cut into thin half-moons. Sprinkle the slices with a pinch of salt and let them sit for about 10 minutes to help reduce the bitterness. Rinse thoroughly under cold water and drain.
      2. Stir-fry the garlic: Heat a wok over medium heat and add 1 tablespoon of cooking oil. Once hot, add the minced garlic and stir-fry until fragrant, about 30 seconds.
      3. Add the bitter melon: Add the prepared bitter melon slices to the wok and stir-fry for 2–3 minutes, until they begin to soften.
      4. Combine with eggs: Push the bitter melon to one side of the wok and pour the beaten eggs into the other side. Allow them to set slightly before stirring them together with the bitter melon. Cook for another 1–2 minutes, or until the eggs are fully cooked and slightly scrambled.
      5. Serve: Serve hot as a main dish or side dish, perfect with steamed rice.

        • Adjust the cooking time for the eggs based on your preference—softer or firmer.
