Hong Kong-style Curry Beef Brisket is a cherished dish that evokes memories of family gatherings and comforting meals. Ingredients:
- 500g beef brisket, cut into 2-inch cubes
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, sliced
- 1-inch piece of ginger, sliced
- 3 medium potatoes, peeled and cut into large chunks
- 2 carrots, peeled and cut into large chunks
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups beef broth
- 400ml coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon salt

Instructions
- Prepare the beef: Heat a wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the beef cubes and sear them until browned on all sides. Remove from the wok and set aside.
- Stir-fry aromatics:
- Add the remaining tablespoon of oil to the wok and sauté the garlic, onion, and ginger until fragrant, about 2 minutes.
- Stir in the curry powder, turmeric, cumin, and paprika. Cook for another 1–2 minutes, allowing the spices to bloom and become fragrant.
- Add the beef and liquids:
- Return the seared beef to the wok. Add the beef broth and coconut milk, stirring well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5–2 hours, or until the beef is tender and the sauce has thickened. 4. Add vegetables:
- After 1 hour of simmering, add the potatoes and carrots to the wok. Continue to cook for another 30 minutes, or until the vegetables are tender.
- Finish and serve:
- Season with soy sauce, sugar, and salt to taste. Adjust the seasoning as needed.

- Serve in a clay pot:
