Chinese New Year is just around the corner, and when I was small, my grandma and mom used to prepare all sorts of little snacks to give away, ready for people to visit us during Lunar New Year. I’m going to share with you a series of home recipes in the coming days, starting with these delicious 賀年琥珀合桃 (Glazed Walnuts). Cooking them in a wok adds a smoky, caramelised depth of flavour that makes them the perfect festive treat!

Ingredients:

  • 300g walnuts
  • 3 tablespoons honey
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of ground ginger

      Instructions

      1. Prepare the wok: Heat your wok over medium heat. Add the walnuts to the wok and toast them for 3–5 minutes, stirring constantly until fragrant and lightly browned.
      2. Make the glaze: In a small bowl, mix together honey, water, salt, vanilla extract, ground cinnamon, and ground ginger until well combined.
      3. Coat the walnuts: Add the glaze mixture to the toasted walnuts in the wok. Stir continuously to coat the walnuts evenly. Cook for 3–5 minutes, or until the glaze thickens and begins to caramelise.
      4. Cool and serve: Remove from the heat and let the walnuts cool in the wok. Once cooled, transfer them to a serving dish or store them in an airtight container for up to two weeks.

        Tips:

        • Cooking in a wok ensures that the walnuts are evenly toasted and coated, without any risk of burning.
        • These glazed walnuts can be enjoyed as a snack or topping for desserts like ice cream or yogurt.
