Ingredients

  • 6 oz (170g) Chinese flat noodles (you can also use other types of noodles like rice noodles or udon)

  • 1/2 pound (225g) thinly sliced beef strips (such as flank or sirloin)
  • 1 small bunch of broccolini, cut into bite-sized pieces
  • 1 carrot, julienned or thinly sliced
  • 1 red pepper, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions

  1. Cook the Chinese flat noodles according to the package instructions. Drain and set them aside.

  2. In a small bowl, mix together the soy sauce, oyster sauce, and sugar to create the sauce. Set this sauce mixture aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. When the oil is hot, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  4. Add the thinly sliced beef to the skillet or wok. Stir-fry for 2-3 minutes until the beef is browned and cooked through. Remove the beef from the pan and set it aside.
  5. In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the broccolini, carrots, and red pepper. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  6. Return the cooked beef to the pan with the vegetables.
  7. Pour the sauce mixture over the beef and vegetables. Toss everything together and cook for an additional 1-2 minutes until the sauce thickens and coats the noodles and vegetables evenly.
  8. Taste the stir-fry and adjust the seasoning with salt, pepper, or a bit of extra soy sauce if needed.
  9. Add the cooked Chinese flat noodles to the pan. Toss everything together until the noodles are heated through and well-coated with the sauce.
  10. Serve the beef and vegetable stir-fry noodles hot, garnished with sesame seeds and chopped green onions if desired.
