  • 1 pound (450g) beef mince
  • Fresh mint leaves
  • Thai basil leaves
  • Red chilli, sliced
  • Purple onion, thinly sliced
  • Vermicelli noodles, boiled
  • Soy sauce
  • Fish sauce
  • Lime wedges (for serving)


      1. In a wok, stir-fry the garlic and ginger mince until aromatic. Add onions and the marinated beef mince over medium-high heat until fully cooked.
      2. Add basil and mint leaves at the very end, then turn off the heat.
      3. Boil vermicelli noodles according to package instructions. Drain and set aside.
      4. Assemble the bowl by placing a serving of boiled vermicelli noodles at the bottom.
      5. Top with the cooked beef mince.
      6. Garnish with lime wedges on the side.
