Garlic-Infused Wok-Fried Eggplant is a flavorful and aromatic dish that brings out the natural richness of eggplant combined with the bold essence of garlic.   • 2 cups cooked jasmine rice, cooled
  • 1 cup dried shredded pork meat floss
  • 1/2 cup cashews, roasted
  • 1/2 cup peas, fresh or frozen
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • 1 egg, beaten
  • Salt and pepper, to taste


        1. Heat vegetable oil in a wok over medium-high heat.
        2. Add minced garlic and sauté until aromatic.
        3. Add shrimp and cook until pink and opaque. Remove and set aside.
        4. In the same wok, add more oil if needed.
        5. Pour the beaten egg into the wok and scramble until just cooked.
        6. Add cooked rice, dried shredded pork meat floss, roasted cashews, peas, and cooked shrimp to the wok.
        7. Mix well, ensuring even distribution of ingredients.

      1. Season with salt and pepper to taste.
      2. Continue to stir-fry until all ingredients are well-coated and heated through.
